Job Description

Pony Dining’s fires have been burning in the heart of The Rocks since 2006. As pioneers of wood-fire cooking in Sydney, our ironbark grill sits at the heart of our open kitchen, where premium steak cuts, fresh seafood and seasonal vegetables meet the raw, elemental power of flame. Inspired by Argentinian grill culture and grounded in Australian produce, every dish carries that unmistakable wood-fired depth. Open Roles

  • Trade Waiter
  • Focus areas: front-of-house service, guest experience, order taking and beverage service, guest upselling, and collaboration with the kitchen to ensure smooth service

Key Responsibilities

What you’ll do

  • Welcome guests and deliver warm, professional service from seating to farewell
  • Take orders, serve food and beverages, and ensure accuracy and timely delivery
  • Provide wine and beverage recommendations, upsell where appropriate, and manage special requests
  • Maintain knowledge of menu items, ingredients, and seasonal offerings; communicate specials clearly
  • Monitor dining room flow, assist with reservations and seating arrangements, and support opening/closing procedures
  • Keep tables clean and well-set, reset dining stations between guests, and ensure mise en place standards
  • Collaborate with kitchen and bar to ensure smooth service and timely communication
  • Uphold Pony Dining standards for cleanliness, safety, and guest experience
  • Assist with guest feedback, issue resolution, and creating memorable dining moments

Skill & Experience

 

What we’re looking for

  • Proven experience in hospitality or food & beverage service, preferably in a premium steak or wood-fire dining environment
  • Strong guest service orientation with a friendly, can-do attitude and problem-solving skills
  • Excellent communication, multitasking, and time-management abilities
  • Ability to work efficiently in a fast-paced, high-volume dining room
  • Knowledge of beverage service, wine or cocktails is a plus
  • Flexibility to work evenings, weekends, and public holidays as required
  • Australian work rights or valid visa/work authorization

Nice-to-haves

  • Experience in Australian grill or steakhouse concepts
  • Formal hospitality or beverage service training
  • Prior experience in a leadership or team-support role
  • Passion for wood-fire cooking and bold, seasonal flavors
