Pony Dining is hiring: Chefs and Cooks

Pony Dining’s fires have been burning in the heart of The Rocks since 2006. As pioneers of wood-fire cooking in Sydney, our ironbark grill sits at the heart of our open kitchen, where premium steak cuts, fresh seafood and seasonal vegetables meet the raw, elemental power of flame. Inspired by Argentinian grill culture and grounded in Australian produce, every dish carries that unmistakable wood-fired depth. From steak to cocktails, the fire shapes it all—a true front-row experience at one of the best steak restaurants in The Rocks.

Open Roles

  • Chef (Sous/Head Chef level) and Cook positions
  • Focus areas: wood-fire grilling, open kitchen operation, steak preparation, seafood handling, seasonal vegetable dishes

Key Responsibilities

What you’ll do

  • Lead and execute high-quality wood-fired dishes with consistency and flair
  • Manage grill station(s) and collaborate with kitchen team to maintain smooth service
  • Ensure all dishes meet Pony Dining’s standards for taste, texture, plating, and temperature
  • Maintain strict food safety, hygiene, and proper mise en place
  • Train and supervise junior cooks, provide feedback, and help foster a collaborative kitchen culture
  • Assist with menu execution, specials, and production planning aligned with seasonal produce
  • Uphold the energy and atmosphere of a front-row dining experience for guests

Skill & Experience

What we’re looking for

  • Proven experience in a kitchen environment, preferably with wood-fire or charcoal grilling
  • Strong knowledge of steak cookery, seafood handling, and vegetable preparation
  • Ability to work under pressure in a busy open kitchen
  • Keen eye for detail, high standards of cleanliness, and pride in presentation
  • Team player with excellent communication and time-management skills
  • Flexibility to work evenings, weekends, and public holidays as required
  • Australian work rights or valid visa/work authorization

Nice-to-haves

  • Experience in Australian grill cuisines
  • Prior leadership or supervisory experience
  • Passion for wood-fire cooking and a strong palate for bolder flavors
