Pony Dining is hiring: Restaurant Managers

Pony Dining’s fires have been burning in the heart of The Rocks since 2006. As pioneers of wood-fire cooking in Sydney, our ironbark grill sits at the heart of our open kitchen, where premium steak cuts, fresh seafood and seasonal vegetables meet the raw, elemental power of flame. Inspired by Argentinian grill culture and grounded in Australian produce, every dish carries that unmistakable wood-fired depth. From steak to cocktails, the fire shapes it all a true front-row experience at one of the best steak restaurants in The Rocks.

  • Focus areas: front-of-house operations, guest experience, staff leadership and development, financials and cost controls, service standards, and seasonal menu integration

Key Responsibilities

What you’ll do

  • Lead and elevate the guest experience from entry to departure, ensuring consistent service excellence
  • Manage day-to-day restaurant operations, including opening/closing procedures, reservations, seating flow, and service rhythm
  • Lead, coach, and develop front-of-house team; set expectations, provide feedback, and foster a collaborative, high-performance culture
  • Oversee service standards, wine and beverage service, and coordination with kitchen to ensure timely, accurate dishes and a seamless flow
  • Monitor financials: budgeting, labour planning, inventory, cost of goods sold, and monthly reporting
  • Drive quality control, cleanliness, and safety compliance in line with Pony Dining standards
  • Implement, monitor, and refine SOPs; manage training programs for onboarding and continuous development
  • Collaborate with management on menu integration, promotions, specials, and seasonal guest experiences
  • Uphold the energy and atmosphere of a front-row dining experience for guests

Skill & Experience

What we’re looking for

  • Proven experience in hospitality management, preferably in a premium steak or wood-fire dining environment
  • Strong leadership and people-management skills with a track record of developing high-performing teams
  • Excellent guest service orientation with ability to handle difficult situations gracefully
  • Solid understanding of P&L, inventory control, scheduling, and revenue generation
  • Strong communication, organization, and time-management skills
  • Ability to thrive in a fast-paced, high-volume setting while maintaining attention to detail
  • Flexibility to work evenings, weekends, and public holidays as required
  • Australian work rights or valid visa/work authorization

Nice-to-haves

  • Experience in Australian grill or steakhouse concepts
  • Background in wine service, mixology, or beverage program leadership
  • Prior leadership or supervisory experience in hospitality
  • Passion for wood-fire cooking and an appreciation for bold, seasonal flavors
