Job Description
GJ Family Trust (trading as Troopers Rest) is seeking an experienced and motivated Sous Chef to join our kitchen team in Braidwood, NSW.
Troopers Rest is a busy regional hospitality venue operating across breakfast, lunch and dinner services. The Sous Chef will work closely with the Head Chef and management team to support the day-to-day operation of the kitchen and maintain high standards of food quality, presentation, safety and consistency.
This is a full-time position offering a salary of $85,000 per annum plus superannuation.
The successful applicant will be expected to contribute to the smooth running of kitchen operations, supervise staff during service and take responsibility for the kitchen in the Head Chef’s absence when required.
Key Responsibilities
Prepare, cook and present high-quality meals across breakfast, lunch and dinner services
Support the Head Chef with the daily operation of the kitchen
Supervise and coordinate kitchen staff during preparation and service
Take responsibility for kitchen operations in the Head Chef’s absence when required
Assist with menu planning, development and implementation
Monitor food quality, presentation and portion control
Maintain consistency across all food services
Assist with food costing, budgeting and cost control
Monitor stock levels and assist with ordering and inventory management
Maintain effective stock rotation and minimise food waste
Ensure compliance with food safety, hygiene and workplace requirements
Maintain high standards of kitchen cleanliness and organisation
Train, mentor and support junior kitchen staff and apprentices
Ensure kitchen equipment and work areas are properly maintained
Work collaboratively with front-of-house staff and management
Assist with rostering and managing kitchen workloads where required
Skill & Experience
The successful applicant will ideally have:
A relevant qualification in Commercial Cookery or equivalent recognised qualification
Relevant experience working as a Chef or Sous Chef in a commercial kitchen
Strong food preparation and cooking skills
Experience supervising or coordinating kitchen staff
Sound knowledge of food safety and kitchen hygiene requirements
Strong organisational and time-management skills
The ability to work effectively under pressure during busy service periods
Good communication and teamwork skills
Experience with stock control, ordering and food costing
A professional, reliable and positive approach to work
The ability to work independently when required
Availability to work a flexible roster including weekends and public holidays
Australian working rights, or eligibility to obtain appropriate working rights
