About the Role:
We are seeking an experienced and passionate Butcher to join a premium, family-owned meat producer renowned for its commitment to ethical farming, sustainable practices, and high-quality, pasture-raised meats. Our client takes pride in delivering artisanal cuts, smallgoods, and specialty products that reflect traditional butchery techniques with a modern twist.
This is a hands-on role where you will be responsible for preparing, processing, and presenting a range of high-quality meats while maintaining the highest standards of hygiene, craftsmanship, and customer service. The ideal candidate will have a strong understanding of whole carcass butchery, smallgoods production, and a dedication to sustainable, ethically sourced meat.

Key Responsibilities

Meat Preparation & Processing:

  • Expertly break down whole carcasses, debone, trim, and portion meat into retail-ready cuts while minimizing waste.
  • Prepare specialty cuts, including crumbed, marinated, and cured meats, using traditional techniques and premium ingredients.
  • Craft smallgoods such as sausages, cured meats, and smoked products using artisanal methods and high-quality seasonings.

Machine Operation & Production:

  • Operate and maintain butchery equipment, including mincers, grinders, tenderisers, and sausage fillers, ensuring efficiency and safety.
  • Manage smoking chambers, curing vats, and cooking kettles to produce smoked and cooked smallgoods with precision.
  • Prepare custom spice blends, brines, and marinades to enhance flavour profiles in line with artisanal standards.

Customer Service & Product Knowledge:

  • Provide expert advice to customers on meat selection, cooking techniques, and optimal cuts for different culinary uses.
  • Assist in menu planning and cost estimation for special orders, bulk purchases, and wholesale requirements.
  • Maintain an attractive and hygienic display of products, always ensure freshness and quality.

Skill & Experience

  • Minimum 1+ years of experience in butchery, preferably within a premium or artisanal meat production environment.
  • Relevant Certificate III Qualification related to the field advertised.
  • Proficiency in whole carcass butchery, smallgoods production, and specialty cuts (e.g., dry-aged, cured, smoked).
  • Strong knowledge of meat safety, hygiene standards, and HACCP compliance.
  • Ability to operate butchery machinery and tools with precision and care.
  • Excellent customer service skills with a passion for educating clients on quality meats.
  • Experience in sustainable or pasture-raised meat production is highly regarded.
