About the Role: Pastry Cook

This is a hands-on position at the heart of the bakery’s daily production. You will be responsible for executing the core baking processes with precision and care, ensuring every item that reaches the customer is a testament to the bakery’s commitment to quality. The role requires a collaborative spirit, a keen eye for detail, and a genuine passion for the art and science of baking.

Key Responsibilities

Ingredient Preparation & Dough Production:

  • Meticulously check the quality of all raw materials and precisely weigh and measure ingredients to strict bakery formulations.
  • Execute core baking techniques including kneading, maturing, cutting, moulding, mixing, and shaping a variety of doughs and pastries.
  • Prepare a range of pastry fillings, ensuring consistency, flavour, and texture align with the bakery’s artisanal standards.

Baking Process & Quality Control:

  • Carefully monitor oven temperatures and visually track the baking process, making precise judgements on baking times to achieve perfect colour, rise, and texture.
  • Coordinate the full baking sequence for batches—from forming and loading, through baking, to unloading, de-panning, and proper cooling.
  • Apply finishing touches with care, including glazing buns and pastries, and decorating cakes with creams and icing.

Equipment Operation & Kitchen Stewardship:

  • Operate and maintain specialized bakery machinery such as dough rollers, moulders, and biscuit cutters.
  • Conduct thorough cleaning, greasing, and maintenance of all baking trays, tins, and equipment to the highest standards of hygiene and readiness.
  • Begin each production shift by checking the cleanliness of equipment and the overall operation of the premises to ensure full compliance with all occupational health and safety regulations.

Skill & Experience

  • Previous 1-2 years’ experience in a bakery, pastry kitchen, or a fast-paced culinary production environment is highly valued.
  • A foundational understanding of baking processes, ingredients, and food safety.
  • The physical stamina to work in a production environment, including standing for extended periods and handling heavy trays.
  • Exceptional attention to detail and a commitment to producing consistent, high-quality work.
  • Excellent time-management skills and the ability to work effectively as part of a close-knit team.
  • A positive, proactive attitude and a willingness to learn and grow within a supportive craft environment.
